The wine is yellow with amber highlights.

The first nose transports us to the terroir of Villers-Marmery. Initial notes of licorice and smokiness are underpinned by a graphite character. The predominance of Chardonnay creates a light, luminous profile. The wine’s mineral character is reinforced by notes of peat and herbal tea.

The olfactory impression is confirmed on the palate, where the attack is fresh, crisp, and light. Notes of balsamic, sandalwood, and eucalyptus emerge, highlighting the role and influence of the Réserve Perpétuelle. In keeping with the initial palate experience, the finish remains light and leaves a sensation of gentle effervescence.

To go with

The prominent Chardonnay notes will beautifully complement seafood dishes such as monkfish with green pepper, skate wing with capers, and lightly seared scallops with a hint of lemon.

MIXOLOGY 

Champagne Soup: 10 cl of Cointreau, 10 cl of freshly squeezed lemon juice, 10 cl of cane syrup, one bottle of Ternaire Brut champagne.

Prepare the cocktail base in advance and refrigerate it. Add the champagne at the last minute.

The Extra-Brut variant is the result of a rigorous selection of specific vintages of ternary cuvée best suited for extended aging on racks.

A few additional years of aging impart maturity and specific organoleptic characteristics that justify a lower dosage.

The color is yellow with golden highlights. 

The initial aroma is an invitation into the familiar world of the Villers-Marmery terroir. Notes of pastries, butter, and puff pastry highlight the Chardonnay’s structure. The aromatic profile is rounded out by peaches in syrup.

On the palate, the attack is full-bodied and expansive. A vinous quality comes through while maintaining a pleasant effervescence. Pastry notes are also present on the palate, enhanced by fruits in syrup, nuts, and almonds.

The subtle balance of flavors offers a wide range of pairing possibilities. Vanilla-confit lamb with crispy rice, ricotta cannoli with lemon supremes, and a burrata tartine with honey-roasted peaches and rosemary.
